Breakfast Tiramisu

There’s not a better memory I have than when the whole family was sat around a table and eating tiramisu made by a local cook in Italy. Considering I was quite little and hated coffee, it was the most mind blowingly tasty dessert and something I’ll never forget!

Only recently have I discovered my love for coffee. As breakfast is my favourite meal and I have decided to try and make more breakfasts for ‘on the go’, I decided to create an edible, transportable coffee galore.

Ingredients:

  • 1/2 cup oats
  • 1 tsp desiccated coconut
  • 2 tsp cocoa powder
  • 1 ripe banana
  • 1/2 cup plain yoghurt
  • 1 tsp coffee granules
  • 15 g dark chocolate
  • 1 tbsp peanut butter
  • Pinch of salt
  • Frozen berries
  • Granola
  1. In a bowl mash up the banana, add the oats, coconut and cocoa. Squish this in to your breakfast container as the bottom layer.
  2. Add just enough water to dissolve the coffee in to the same bowl as before, stir in the yoghurt (I use Dorset Dairy co) and mix till smooth. Add this as the second layer.
  3. Melt the chocolate and peanut butter together in the microwave or over the hob. Sprinkle in the salt (I use Dorset sea salt). Once smooth, drizzle to top the layers.
  4. When ready to serve, add on extra toppings, I like to use frozen cherries, fresh strawberries and granola!
